In our house, we love a good stir fry! Being half-Filipino, we ate a lot of rice dishes growing up, so having rice as our meal starch is second nature to me. Having an entree that has protein and vegetables all tossed in a delicious sauce makes this a kid-friendly, easy weeknight meal that the whole family loves.
Stir Fried Chicken with Green Beans (4 servings)
Ingredients
2 boneless, skinless chicken breasts
10 ounces green beans
1 large yellow onion
2 garlic cloves
1/2 teaspoon ground ginger
1/2 teaspoon black pepper
5 Tablespoons olive oil
1/4 cup crushed peanuts (optional, or use sesame seeds if desired)
Stir Fry Sauce
1/3 cup soy sauce
1/4 cup mirin*
3 Tablespoons rice vinegar
2 Tablespoons brown sugar
2 teaspoons corn starch
1 teaspoon sesame oil
Directions
Heat 3 Tablespoons of oil in a large skillet over medium high heat.
Slice chicken breasts into thin, even strips. Thinly slice onion and garlic. Cut green beans in half. Season the chicken with the ground ginger and black pepper.
Place chicken in and even layer in the skillet and sear on both sides until cooked though, about 5 minutes. Remove from pan and set aside.
To the same skillet, add two more tablespoons oil, then add the green beans, garlic, and onions and cook for about 7-10 minutes, stirring occasionally.
While the green beans cook, mix all the sauce ingredients in a bowl until the cornstarch and sugar are dissolved.
When green beans are tender, but still crisp, reduce the heat to medium and return the chicken to the pan. Pour the sauce over top of green beans and chicken, then stir to coat. Reduce heat to simmer, stirring frequently until sauce is thickened.
Serve over a bed of rice. Garnish with crushed peanuts or sesame seeds. Enjoy!
*Mirin can be substituted with extra brown sugar if needed. If not using mirin, use 5 Tablespoons of brown sugar (instead of 2 Tablespoons listed) and add 2 tablespoons water.
